PRIMS Improves Plant Performance at Modern Italian Bakery, NY

Modern Italian Bakery is an Oakdale, NY-based manufacturer of artisan breads and specialty items that makes fresh regional product, and a frozen line that is distributed nationally.


Seeing the positive effect of PRIMS at another plant, Julio Llovet, Plant Manger at Modern, initiated a rush campaign to get PRIMS installed. He suspected that many of the bakery's batches were “out of spec”.  He was correct - as he discovered after installing PRIMS, about 15% of their doughs were out-of-spec.  PRIMS allowed him to drastically improve the plant’s performance.


“Within six months, we reduced our out of spec doughs from about 15% to 2%, and reduced our overall waste from about 9.0% to 3.5%.  It took about 3 months to achieve ROI. “


Modern installed the PRIMS System to enforce recipe compliance at 7 mixers and a pre-scale station.  They also use PRIMS to control their plant inventory and to provide lot tracking capability that is required by many of their larger customers.


“With full lot traceability, we’re doing business with major players who see the [lot tracking] capability [provided by PRIMS] as a best practice.  With it, I could do a mock recall in 30 minutes with no need to track down paperwork or dig through archives to find the right mixing sheets and production schedule.  All our production records are now kept electronically.”


Julio is even able to log on to the PRIMS system using his laptop from home to monitor the work being done by the third shift.


“It was like I was managing in the dark and somebody turned on the lights because of all the controls we now have.  Here at Modern we love PRIMS.”


Modern also recently implemented a powerful new component of PRIMS.  This module, the Production Scheduling Wizard, creates the daily production schedule for the bakery based on the day’s sales orders.  It creates an optimum schedule that considers a number of factors that are specific to the plant and its equipment.


The early results that Modern has achieved are impressive.  Julio says that they are on track to save almost 100,000 pounds of waste in the first month – roughly 3.6% of total monthly production.  The plant’s automated waste scaling system allows him to measure these savings with accuracy.


“Prior to the installation of the Production Scheduling Wizard we had left over doughs – half a batch of this, a rack of that. Some of it we knew was significant; some of it did not seem to make much difference.  This software allowed us to take complete control over the whole scheduling process.  My over-mix has essentially gone to zero – we make only the amount of product required to meet our existing sales orders.”

PRIMS Solves Recipe Compliance Issues at Stauffer’s Biscuit Company


Stauffer’s is best recognized for its animal crackers, but also produces a variety of crackers and cookies in three bakeries around the United States. Stauffer’s installed the PRIMS system in it’s York, PA, plant to control recipe compliance at 6 Pre-Scale Stations, 2 Icing Mixers, and 8 Mixer Stations.  At the mixers, PRIMS controls the bulk ingredient systems for flour, granulated sugar, HCFS and temperature-controlled water.  The project was approved on the basis of an expected ROI of five months.

Control Engineering Company Impressed by PRIMS’ Ease of Installation


Focus Works Inc. Reseller, Cornerstone Automation, completed its first installation of PRIMS recently at the Stroehmann's Bakery Plant in Pennsylvania.


Alan Ferrin of Cornerstone was impressed by the system’s ease of installation.
